This recipe comes together in literally just a few minutes if you have one of the three healthy ingredients on hand.
Sweet Secret Ingredient is Sweet Potato!
This recipe uses no sugar at all. None. Zero. It gets all its tasty sweetness from the main ingredient, which is sweet potato. Sweet potato is so good for you it’s hard to believe it’s so delicious. But a roasted sweet potato is what makes this pudding creamy, sweet, and so delicious.
This Vegan Chocolate Pudding Needs Roasted Sweet Potatoes
Roasting the sweet potatoes is about the only thing that takes any time in this recipe. Ideally, I like to keep roasted sweet potatoes on hand. It saves so much time and effort to roast several sweet potatoes and then keep them in their skins in the fridge.
Best Roasted Sweet Potatoes
Here’s what I’ve found to be both the easiest and tastiest way to roast/bake sweet potatoes. We have a small convection oven I always use for this, but any oven or large toaster oven would work just as well.
I’ve tried all sorts of methods for the best tasting roasted sweet potatoes, including baking them slowly over several hours. I’ve also read all kinds of tips like to peel them first or to poke holes in the skin.
Here’s what seems to work best for me and it’s super easy. I simply bake the sweet potatoes hot and fast to get the sweetest, creamiest result. Seriously. Nothing complicated, you don’t even need to poke holes in the skin.
Just rinse off sweet potatoes a little, pat them dry, and place on a foil-lined tray. Bake at 450 degrees for about an hour.
Easy.
Eat them right away hot or allow them to cool and store in the refrigerator for up to 3-5 days.
Once cooled, they’re perfect to use for this recipe!

Turn this into a delicious smoothie bowl by adding your choice of pecans, almonds, craisins, raisins, chopped chocolate, chocolate chips, hemp seeds, a drizzle of tahini or syrup, etc.
I just had this for breakfast and it was YUMMY! ^

Ingredients
- 1 1/2cupsbaked and chilled sweet potato flesh
- 3/4cupplant-based milkplus more if needed for blending or consistency
- 1/4cupcocoa powder
- pinchvanilla powderoptional
- pinchsaltoptional
Instructions
Place the sweet potato, milk, and cocoa powder in a high-speed blender and puree until smooth and creamy.
It's delicious as is, or add whatever you like or have on hand. A bit of stevia makes it even sweeter, some vanilla powder is nice, and a pinch of salt always enhances any chocolate.
Turn this into a delicious smoothie bowl by adding your choice of pecans, almonds, craisins, raisins, chopped chocolate, chocolate chips, hemp seeds, a drizzle of tahini or syrup, etc.
Recipe Notes
Bake sweet potatoes ahead of time and store in the fridge to use in this or other tasty recipes!
Coconut milk or hemp milk is delicious in this but any plant-based milk will do.
Makes about two 1 cup servings.
